Made quesadillas the other night. My two boys (7 and 13) like them. My wife (Japanese) didn’t say much, but is happy when I cook a few nights a week.

Oklahoma Onion Burger. OK, sure, it doesn't look all that great, but it is a fantastic 12 paper towel burger. Just look at the pool of grease, Russian dressing and melty cheese! Smashed patties on the griddle, throw a ton of sliced onion on top, let the burger crust up, then flip so the onion steams, add American cheese to the crust, let steam/griddle until melted. While all this is happening, butter a sesame seed bun and griddle that. BUT, flip the top so the seasame seeds toast a little. Add Russian dressing. Have a roll of paper towels on-hand.

Changing things up a little in the meat department. Prime NY strip with shallot red wine reduction butter sauce with baked potato and wedge with blue cheese (not shown). 2017 Black Stallion cabernet paired beautifully. While I've been doing only ribeyes for years now, this NY strip was excellent, bolder and beefier than a ribeye and surprisingly very tender done to just over rare. The sauce was perfect for the steak. The small amount of sour cream was for photo purposes only so you could actually see the potato.

Fajita dry rub sirloin tacos. Tasty but no substitute for the birria tacos. Have to do those again. Let the dry rubbed steaks sit overnight and leave on the counter all day. Blacken in cast iron. Griddle the tortillas to melt the cheese. Assemble and enjoy with a dark ale.
