BBQ Magret Duck breast, with tamarind guajillo chile glaze, pineapple serrano chili salsa, and pickeled red onions on locally made artisanal corn tortillas..

Equals: Duck Tacos..

I love Duck.

Duck doesn't have a great following on North American tables, and gets little respect compared to the soylent green chicken sold in our markets by Mr Perdue , and Daffy will tell you that he gets no respect,

I love Tacos, and foods you can eat with no utensils except for your hands...

The Duck, pineapple and serranos were roasted on hardwood charcoal from the Great White North SmileWavy

In all it was very good, there was a bit to much acid from the tamarind, lime and pineapple.. could have used some crema or a mayo, alas my fridge was unable to produce those items from its depth...

that isn't really ICE CREAM

I recently got a new grill, a Weber Genesis 310, and I'm relearning to grill properly with the help of online lessons from America's Test Kitchen Cooking School. Mrs. Mossguy talked me into it and i was reticent until I realized it would mean new and different tools! Here is tonight's effort: Filet Mignon, grilled Pineapple (again), sautéed mushrooms, and niblets.

Also Kaiser Rolls, Green Salad with Pine Nuts, Oil & Vinegar, Breyer's Vanilla Ice Cream for dessert. (REAL Ice Cream, Randy.)

I literally want to reach into my monitor and grab that fish taco!!! Wow!! I KNOW it tastes as good as it looks!! And I love fresh, light food like that. That salsa could be eaten with spoon!

Outstanding, Vash!

that stuff has a high fat sauce on it

jyl 06-20-2012 09:00 PM

The last one has an interesting dressing, a Japanese almond dressing. Dashi (bonito flakes, kelp, water), rice vinegar, puréed almonds, sugar, and I forget what else.

RWebb 06-21-2012 11:27 AM

if you want to post the recipe or proportions, I'd like to try it - not sure if we have bonito flakes here tho...

azasadny 06-21-2012 11:34 AM

Most large grocery stores will have bonito flakes in their "ethnic food" aisle, near the wasabi and dried seaweed...

vash 06-21-2012 12:16 PM

if not, i can send you a bag of bonito flakes.

i have seen them sold at pet stores as a cat treat. it is something like 10x the cost at my local asian market. brilliant scheme!! genius!!

money raping the above average cat lover.

vash 06-21-2012 05:07 PM

back to my roots.

chicken stir fry with chinese broccoli..ginger/blackbean/garlic sauce.

good way to burn up excess veggies. only half a breast of chicken in this one.
