so I had smoked wild Turkey today...holy ****
I **** yous guys not, this stuff was BETTER than ANY thanksgiving turkey I have EVER eaten. guy brined it 24 hrs and smoked it for 2. moist, delicious and not even slightly gamey. just OMG good.
I LOVE bird hunting but turkey has never appealed to me as you're in the woods when ticks and such are very active but damn if that stuff wasn't the best game meat I've ever eaten.

and I don't mean like 'oh wow, for game this is actually kinda tasty' good. I mean like 'I'll take another helping of the wild turkey please' even when there was fried rockfish (god forgive mel) next to it.

I've always heard wild turkey was tough. We lots around here, but the season is short & the locals don't hunt them or permit anybody to come on their property to hunt them. I'd like to try it some time, but would rather see the flocks of them roaming around the property.

lots of meat on the serving dish so COULD be I only ate from a very tender piece. host said bird was just breasted and my experience with smaller birds (and store turkey) is the entire breast will be of same consistency but who knows.
I guess at this point if offered wt of known origin I'd gladly accept. we hear turkeys quite a bit while water fowling in the fall/winter. I THINK our state might have an experimental jan turkey season. might have to consider it this year. though I understand it to be a very tough bird to fool.

Turkey done right is one of the tastiest meats you'll ever eat- problem is is that it's almost never done right!

Go and search "Trash can Turkey". It's the only way I will cook one, although I don't use a trash can but rather a beer keg that has the top cut out of it.

I'll see what I can find out. I know it had some sugar in addition to the salt and was brined nearly 24 hrs. He did say he followed the brine recipe carefully.

My cousin gets out the roast beef for sandwiches, I tell him best i've ever had. You want another? Hell yeah! Halfway through the 2nd one he informs me we are eating Moose. ...Bullwinkle ???!!!

here is what i did with some of my wild turkey.
made a schnitzel topped with fennel slaw. made my wife okay with me poking an arrow hole in a great looking bird.
