How difficult would it be to set one of these cars up with individual throttle bodies?

hard. there is a tuner web page that has them. they are ridiculously expensive.

I remember of some guys using either Weber Carbs or using Japo motorcycle Carb's. Race guys do this all the time but never seen other than pictures.
