How would I find.....
Back in the late 80s Porsche put together a package you could buy to modify a cabriolet into a single seat speedster.....
How would one go about finding an OEM package? Contact Porsche Classics?

I had a 914 like that, we bought it to run Lemon's, never did, but the chassis was the test bed for the 904 project. The really funny thing is he moved the pedals, steering, seats, but left the shifter in the center so you'd probably look like a real jerk off on the track!
