At around 1,100 rpm (when warm) there is an noticeable knock. Oil pressure gauge is reading below 20 at idle when engine is warm.
Could this be caused by a low oil level?
With a dry sump...

That rebuild estimate is very high. Rebuild costs haven't changed much. $5-7K from someone who knows what they are doing. It cost me $3K to have my 2.2T motor rebuilt, not whole lot to it.

It doesn't look like water can enter the air box easily, overfilling the tank with oil will just be burned up during combustion.

I need to have my 75 911S repainted. The paint job from a few years ago has micro blisters apparently from a inoperative moisture trap.
Color is Peru Red and Peru Red isn't my favorite Porsche...
