Yeah, no way I'd go with regular seats if you're going to using the car mainly for track duty, they just are not as safe with a harness. Spend the money for decent racing seats.

I think the early manual seats are hard to find, especially in halfway decent condition. Last time I looked at 928 International all they had were power seats.
