Red Beans and Rice

It think RB&R deserves a separate thread for the less culinary talented. No garnish, no twists, just simple, and can't be wrecked unless you are.

I like mine with sausage, and just found a new brand. James', hot and spicy sausage. I'm in Texas and most of you likely can't get it, or I assume so, just like Blue Bell, but it works. I wanted to grill the sausage, but ran out of lpg 3 minutes in and had to finish it in the oven. Once cut into smaller pieces, Tony Chachere's did the rest of the work. I know, not scratch cooking, today wasn't the day for that. I wasn't going with Zatarain's either, although it's pretty good.

Either way, it's good sausage. I haven't found one that I would speak highly of until now, even my own homemade.

James'. Good stuff. Give it a try. On to a bowl of Blue Bell now.

Anybody want my recipe for ramen noodles eaten raw straight out of the bag? It’s crunchy.

I make a nice kidney bean, roasted tomatoes, onion and burger chili. I cook dry bean..instead of buying canned. I use Allspice,. Cinnamon along with roasted garlic, cumin corriander, Oregano, pure chili powder and at the end some corn masa flour as a thickener.


As far as chili powder i use dried Guilijho and Passicilla roasted on a hot griddle..seeded ..then ground fine. It makes an earthy flavor..

I have been making this basic recipe since the 8th grade.

A feel places I go to such as Sambal the rice is perfect.

less culinary talented?

Well, that be me. I don't know about the red beans, but my simple go to rice dish is Loco Moco.

When I was a kid, I hated rice now, there's no such thing as bad rice. Spanish, Mexican, basmati, wild rice, is all damn good to me. I have to ease off the rice and noodles because I eat too much of it and not enough exercise to burn it off. Speaking of rice, we had Hawaiian BBQ chicken with rice tonight.

No kidney beans! Use small, red beans. Huge difference.

Cuban style black beans and rice is my fave. They go with anything porky, beefy or even chickeny.

Red beans and rice with sausage when good is great, but I've had some that was super bland.

I also like Cuban black beans and yellow rice.

I won’t give you a recipe for it, as you can find hundreds of them on the Internet for free, but I’ll make some suggestions. Most of the recipes will call for you to start with what is known as the Trinity in New Orleans cooking, diced onion, celery and bell pepper. Most of the time when I cook this, I omit the celery and the bell pepper. There’s always garlic in the recipes, I usually add quite a bit more than what most recipes call for. I also add finally diced jalapeños, to give the beans a nice background level of heat. I often omit the sausage and use smoked pork neck bones instead. These are cooked with the beans, removed and the meat taken from the bones, then added back to the beans. I often omit most of the dried spices, and I generally never add pre-blended Cajun spice concoctions. This ends up tasting less like something a Cajun might make but it’s a pretty darn tasty version of pork and beans. I generally serve it with diced green onion tops, or maybe some sour cream.

Make sure you use the proper red beans and not kidney beans.

You can cook it low and slow, or cook it in a much higher heat and keep adding water as you cook, to keep the beans just barely covered.

Soaking the beans ahead of time is also not absolutely necessary.

I generally like it better without the rice, but I eat it both ways.

Use chicken stock to cook the beans in. Add smoke sausage and your collection of spices. When done, and before you eat, saute some thin cut yellow onions in the same chicken stock with pieces of chapped garlic. Put your perfectly cooked rice in a bowl, then those sauteed onions with the beans and suasage over it. So good, "make you slap ya mama"!

Red Beans and Rice is a Monday dish. In New Orleans woman would cook RB&R on Monday because it was wash day. So the Beans cooked all day while doing the clothes.
At our house RB&R is an event. We make a chicken stock. start off with the Trinity and use andouille sausage. Lots of fresh herbs and spices. Good RB&R are creamy and to get them creamy requires long and slow cooking.
And always do your trinity in bacon grease.

The business where I was employed for many years was owned by a couple from New Orleans. She still spoke Cajun French.

About once per year she would bring in a big pot of Read Beans and Rice. Lots of Andouille sausage and Cajun spices, oooooweeee is was good. It did get a little um, "musical" around there in the afternoon with a bunch of guys stuffed with beans.

Had a Cajun gentlemen who would sell Red Beans and Rice out of his trailer at Nostalgia Racing events here in Colorado. If you didnt get your order in before 11:00 AM, you were too late because he was sold out. It was amazingly good!

There is a smaller franchise here in Colorado, possibly nation wide, who specializes in selling chicken (not KFC) . They added RB&R to their menu. I was remembering the Cajun's stuff, and was hungry, and was very near one of the franchises so I though I would give it a try.
I will give them credit for honesty because their exact recipe was red beans and rice, nothing else, just red beans and rice. That was the last time I visited that franchise.
