I'm guessing it's partially so that if there's a big boom, stuff lands in the water instead of on people. The weather in FL is generally pretty good, but then I think they need better than that to launch.

Closer to the equator. It's why the Europeans launch from French Guiana.

Musk is building his launch facility down at the southern tip of Texas for the same reason.

Interesting - surprised a couple of hundred miles would make a difference given the overall distance.

Water proximity makes sense if stuff goes wrong.

One thing to note, the Falcon 9 with the Dragon crew can just barely do the job. That is why there was only a one minute window for the launch. Very little margin.
