Classic Thanksgiving Dinner

I'm driving out to Chicago for Thanksgiving and making Thanksgiving dinner for someone who has never one. She's getting the turkey from Williams Sonoma but I'm making everything else. Probably make it here and bring it out along with a couple of lobsters and some bisque.

What is on everyone's Thanksgiving dinner table?

This is going to be a strange year for Thanksgiving. I am thinking about a turkey breast as opposed to a turkey...working with my girlfriend on a menu right now. Turkey, stuffing, Brussel sprouts, cranberry sauce, feeling like I want more, but with only two adults, and kids who do not like turkey, going to be challenging...

Prime Rib.

i am gonna mimic the classic San Fransisco HOUSE OF PRIME RIB dinner. smooth mashed potatoes, creamed spinach, the salad that is super heavy with celery salt, and of course..yorkshire pudding.

i'll probably crash and burn on the yorkshire pudding..i am 100% not successful thus far.

OR..i will wuss out and buy the dinner from Gary Danko in San Fransisco..hahha.

A few years ago I started making my own turkey stock ahead of time. Big improvement over the store-bought stuff that comes in a box.

Add a some sweet potatoes (or yams?) with a toasted marshmallow topping and a pumpkin pie, and this is my ideal T-Day dinner.

That listing sounds real good....except for one item..Pumpkin Pie.
I don't know how anyone likes that brown crap. Might as well eat dandelion or milkweed pie.

Same thing almost every year:

Turkey
smashed 'taters
Homemade gravy
Corn cut from the cobb
crescent rolls
stuffing
cranberry
and of course, green bean casserole.
desert is a pumpkin and a cherry pie, with whipped cream and vanilla ice cream.

If we're hosting a large group I'll cook a ham too.

Gonna have a brand new kitchen to cook it in this year, if we can get it finished in time.

My wife stresses out so much over the menu and the preparation....I truly do not understand why...
It will be her, 2 of my 3 sons and myself.....

Pineapple Cranberry Chutney (My own recipe)

12 oz fresh cranberries
24 oz Apple juice
2 cups Chopped fresh pineapple (tidbits)
1/2 cup sugar (white or raw)
1/2 cup light brown sugar
1/2 tsp ground cinnamon
1/2 tsp minced ginger
1/4 tsp ground clove
1/4 tsp salt (optional)
1 cup walnuts (coarsely chopped)
1 cup celery (coarsely chopped)
In a soup pot, place cranberries, apple juice (should cover the berries). Cook on high for 10 minutes or until all the berries have popped. You'll have a few stubborn berries so you can pop them with your spoon.
Stir in sugars, spices and walnuts and cook for 5 more minutes.
Turn the heat down to simmer and add your pineapple chucks. Simmer for 20 minutes.
Just before you turn off the burner stir in the chopped celery. We want it to remain crispy and limit the celery favor spread.
Let cool and serve......enjoy

Here in Alberta, Covid was nearly under control. Even kids going back to school didn’t result in a bunch of new cases. Everything was ticking along nicely with under 50 new cases per day...

Then Canadian Thanksgiving happened on October 12th. Everyone got together and Covid cases exploded. We went from around 2000 cases to over 10,000 cases in a month. Yesterday was the first in weeks where we had under 1000 new cases. Please consider keeping the germs at home. Don’t do like we did.

Probably some small batch whiskey while preparing and red wine with the meal :--)

Last Thanksgiving we had 26 people here. Dragged two dining tables together, extending all the way to the living room. Used multiple sets of china, silver, etc. What a production. Fortunately I have a commercial dishwasher...

This year we are just four. Self, wife, kid living at home, kid coming back from college - after he gets his Covid test. So, dinner will be different.

We are going to do a duck and a ham. Not decided how to make the duck, probably do something French like canard a l'orange. The ham will be your basic honey baked. Not decided on appetizers and sides. Probably stick to the basics, creamed spinach with Amaretto, creamed corn with nutmeg, cheesy mashed potatoes, an ornamental salad. We plan to each do a dessert and have a competition. I'm going to do creme caramels.

Oh, daughter wants to do this thing where you debone a chicken without opening it up, so you have a whole boneless bird that can be filled with stuffing and roasted. If she insists, we'll do that in addition to the duck. I'll sous vide the boneless chicken to minimum doneness before filling with par cooked stuffing, so the roasting time will be short. The juices captured in the sous vide bag will become a gravy.
