That guy is crazy, Benihana would love him.

He’s very talented, as to that one particular thing he makes. It seems there are a lot of chefs in Japan that specialize in one particular thing and do it incredibly well. It makes me want to hop a plane to Tokyo and go on a weeklong eating binge.

If you want to add meat, add sausage and then make a fried potato hash, instead of a tortilla. Potatoes, sausage, onions, jalapeños, yellow American cheese. A couple fried eggs on top.

If you should be so fortunate as to come across a piece of Seranno Jamon, slice it thin and eat it by itself, don’t waste it in an omelette.

JR, you and probably Patrick, and a few others here are excellent chefs. I mean "next level" not backyard BBQ level, which is the level most of us including myself are on.

It would be a hoot to do a Pelican OT virtual cookbook thread someday. Post only recipies or video of you creating your dish. The intent is to have others try your food......

Some of us have cooked for a living, at some point in our deep, dark past. Almost as much fun as you can have, with your clothes on.

There are tens of thousands of good recipes in the cookbooks of the last 20 years. Damn near every one of them is findable online, in some blog or other.

Find a big name chef you like and go cook his recipes.

Mas, you missed out. My ex used to make that for me a lot, but no demiglace.

You can find Serrano ham at Costco during Xmas. Usually about $99 and comes with the cutting board and knife.

"How do you like your eggs?"

Next week....hard-boiled and multi-colored...with salt.
