Beef Tallow French Fries
Local grocery store had Bone in Rib-roast on sale, so I picked up a couple. Cooked one tonight for myself and Mrs. Beard.
We decided to air fry some French Fries. I noticed the nice beef tallow forming around the roast. About 20 minutes before it was done, I added the French Fries around the roast. OMG! The difference in flavor and texture of the French Fries. I remember having steak au poivre in Paris (Durands) and they served fries with it. The flavor today reminded me of that! I also remember that McDonalds used to use beef tallow for the fryers. The fries have suffered ever since. I saved the leftover oil and plan to add to it. I may buy some tallow from a Wagyu beef ranch.

Yeah, knew about McDonalds and the beef tallow....
But the last few years all of my beef tallow references have been in relation to patch lube and such for muzzle loaders... (I don't use it, I like plain old Crisco)
