GF wants me to do a day class on sourdough. Making bread, given the starter, understanding it etc. I said "why? I know where to buy the bread already made." To further put pressure on me she suggested to my close friend Dario that both of us go to the class and he is singing the praises of sourdough pizza bases.

$50 and a day class. I could buy six loaves for that money.

I make it every week. Took several months to get a rhythm but I can finally get consistent results. I never buy bread any more.

I'm making 3 loaves this weekend. It's a lot of steps that stretch over 4 days for my method. Not that much total time but there are critical steps and critical timing. It makes a really good bread and is worth it to me.

I make some at least once a week, use 1100g flour at 70% hydration. Half gets baked in dutch oven using the Tartine technique and half gets a fridge ferment for a few days and used as 3 pizzas. Sourdough pizza dough is killer.

I tried sourdough when making bread was a hobby for us. We can't buy any decent bread around here so I pretty much have to make my own. Now that bread making is a weekly chore I just don't have the time.

I had some starter but it got accidentally tossed when my Daughter In Law was making room in our fridge for the baby's formula. I had the San Fran culture.

I've since reordered San Francisco and Austrian, I just need to get around to activation. This is a guy who had traveled the world collecting cultures, some thousands of years old....

I tried it but it didn't rise. Apparently, the bran is sharp and cuts the bubbles. Just my experience tho.

Not inclined to make bread at this point, but I found a cracked wheat sourdough I buy and only eat that at this point - that is when I eat breat. I've cut down on bread as part of my carb intake reduction.

The wife makes a loaf every week, she's always experimenting with various flours, environments, etc. Sourdough is an experiment in chaos.

Those who try it, know that you have discard yeast, while growing the mother. Take the discard and do stuff with it. Sourdough pizza crust, sourdough crackers, sourdough pretzels...my wife even makes cheez-its replicas, sourdough crackers with cheese and salt baked in them.

I'm a bit like Marv, in that I try to reduce carbs.

However I do enjoy sourdough bread. I've just found out the day course that I mentioned earlier is $150 not the $50 that I thought it was. $150 divided by $8.50 is a lot of loaves and once every few weeks is good enough for me.

And I'm not sure I'm up for feeding the mother and dividing it up each day. Hopefully my friend Dario does it and I can have a bit of the discarded mother every few weeks when I want bread or pizza.

We bought a pizza oven a year or so ago and I make the dough, usually once a week. I haven't gotten into sourdough yet but enjoy the process of making a simple neapolitan dough. It took a bit to get down a recipe and rise I like. I've thought about getting a starter and adding bread to the weekly process. I also got a hand me down pasta maker from my daughter. That's my next adventure.

Another of those things I miss. Diabetes robbing me of Cindy's sourdough cooking. She used a starter she called "Herman"...from her family.

My wife tried getting into making this before the Holidays. It didn't last long with her.

I likened it to when eating almonds, or avocado toast, or blueberries, or whatever fad was going on that soon faded.

My old boss and his wife went out to San Fransisco back in the 1980s and fell in love with sourdough bread and brought back some starter on that trip.

They raved about how wonderful it was for a long time. Of course his wife took care of the baking and keeping the starter happy and alive. Then one day it dawned on her that it was like having a child. They could not go on vacation, and it had to be taken care of and would die if not used and more bread was made.

One day she said she had murder in her heart, and they baked the last loaf and she was thrilled to not HAVE TO bake bread again.
