I have a couple pieces of copper cookware. And a stainless steel oblong fish pan and they are a bicht for sticking, burning and cleaning. I should look up how to defeat that but they end up being decorative while I use modern and classic cookware. No bare metal except cast iron. That's my wife's thing, I avoid those too.

I had a heck of a time with stainless steel sticking, then the guys here told me to get the pot hot, then add oil, then fairly quickly add the food. That has worked for me.

If I add the oil to the pan and heat the pan (and the oil with it) then I have a problem with stainless sticking. I can cook eggs in stainless so that when I'm done, you almost can't tell that I cooked anything in it.

Heat it till a drop of water dances on the surface. then add your oil
