Yuck! Wilted Lettuce. My mother made that when I was a kid, and I hated it - still do. However I don't hate bacon by a long shot, and I've actually taken to having a small bowl of bacon grease beside the cook top lately. When I was a baby, my mother had to watch me when she took me to the grocery store with her. On the way home, I would tear open the (wrapped in white butcher paper at that time) package of bacon and eat it raw. Mmmmmm!

Glad you enjoyed them Tim, they are very addicting... Back in the day, Mom used to keep the coffee can with bacon grease above the stove.... had a little in everything she cooked probably... Times have changed and I rarely treat myself to these sandwiches or bacon in general... We used to have fried Bacon/cabbage & onions growing up, I have changed the recipe to where we now have lean sausage with the cabbage and onions... little things like that, and try to keep everything in moderation... as far as the Spainish and Italian pork, I got ahold of some ham a few months ago from the specialty section at the grocery store... was thinly sliced and textured like a good quality pepperoni... wasn't prosciutto, but similar... that stuff actually melted like butter when you put it in your mouth... had a great flavor as well... if I could get a couple pounds of that and some of the cheeses from Dottore's french tour thread, I would be set for a while....
