the s/o and I decided to get back and do it again..return to an old fav.... Sea Bass, Tofu, veggies, peanuts, in a broth of Szechuan chilis and peppers.. It was in your face good eatin...we also got twice cooked pork belly with garlic chive.. I was so good we ate it before we could shoot a pic... ![]() ![]() When we got home from our (her) resupply expedition... I decided to further my bread making skills... Focaccia stuffed with Tellagio and Pancetta:

![]() May I introduce to you all the "The Bubba Burger", with two 1/2 pound patties of hand formed beef, with bacon, three kinds of cheese, and all the trimmings. They use a steak knife stabbed through the top to hold it all together, yes it's that big/thick/tall. You should see their WTF burger.............OMG ![]()

Why all the hatin on tofu? there are dozens of different types of tofu, and a myriad of was to prepare it?
I bet you tofu-phobes would enjoy something like this: Sizzling tofu with spicy sauce, from a little Malay hole in the wall restaurant near my house

Not a "tofu-phobe", and I'm not "hatin" on it. I just don't like the consistency of it, it's like eating semi solid mush.

I bet a lot of tofu-phones ate tofu without knowing it…
Just like people saying they would never eat horse meat. Maybe knowingly they would not but unless you live in France, Quebec or other few jurisdictions where there is segregated store that sell horse meat, a lot of people have ate it without knowing it and paying beef price in the process. Tofu's consistency can be changed a lot by the cooking method and the type of tofu. Soft or silken tofu, simmered, will have that almost-mush wet consistency. Firm tofu, simmered, will be more like a boiled egg white. Firm tofu, pressed before slicing, then sliced and fried with enough heat, will have a crusty exterior and a firm, dry interior. You can also buy pressed and dried tofu which is definitely chewy, almost like luncheon meat. And of course you can bread or batter tofu and deep fry it to make a crunchy treat.
Tofu's taste - well, that is the cool thing about tofu, it can be made to taste like almost anything, because it soaks up marinades and sauces. It is a pretty flexible food, but you have to experiment.
