Where else would a bunch of gearheads talk about eggs?!
Fairly steady diet of English perfected 3 min. soft boiled. +1 on those deviled eggs. Eggs Oscar - Variants of but basically in this order: poached egg on an english muffin, Canadian bacon, asparagus, crab meat and topped with a hollandaise sauce. I eat one egg scrambled because that is the fastest way to cook an egg. I follow the Julia Child method... sorta. I don't mind if it doesn't roll up perfectly like hers. And I use real butter, but only a fraction of what she used. My God, she used the butter!
I will put it on a tortilla or maybe a slice of toast. If on the tortilla I will roll in up in a sheet of foil with a few drops of Tabasco. Usually I take this version out the door with me. I'll never have a job again where I have to drive and then be at work at 7:30 am. But when I did, I always had the egg/tortilla to get the day started and then ate a slightly bigger meal at morning break. I could make the egg thing in less than 2 minutes. I never eat more than one egg. |

Over medium with corned beef hash and wheat toast dry. Cup of hot green tea, no sweetener or cream. Bowl of fruit on the side and tall glass of ice water.

crazy chinese peasant recipe coming up.
take some eggs. say 4 or five of them for a side dish. break them into a measuring cup. note the volume. dump eggs into a bowl. add the EXACT same volume of water (or chicken stock. i use water). add some salt, white pepper, soil sauce, maybe some sesame oil. whip it all up. you can stop there. or you can add things. chopped asian mushroom, green onions..some ham..whatever. i strain the egg mixture before adding the chopped ingredients. then put it all into a heat proof bowl. set the bowl into a bigger pot of water to steam. 20 minutes. you get a velvety bowl of eggs..it has the texture of silken tofu. great to spoon over rice with a side of veggies. it originated with poor rice farmers. that's what my mom said. it is called "sui dan" (water eggs)
