I've been tossing the greens out. Should I juice those too?

Don't know what the greens would be like in a juicer, but steamed with a little vinegar, I think they're great.

LOVE Beets, turnips, rutabagas, and other weird stuff.

Fresh from the garden is a big difference, next best is from Underwood Farms here locally.

Clean them and coat them in olive oil, aluminum wrap and onto the grill.

The sugar is what sets the flavor and the garden oil is important.

I love baby beets with some arugula, mixed greens, goat cheese, and balsamic dressing. Yum! I eat that about three to four times a week sometimes. Never have had the greens. Sounds delish! Anybody have a good recipe for them?

I do too. I roast them. It is also good with Greek garlic mashed potatoes.

at a farmers market once..a lady gave me all her beet greens. i cooked them like i would southern style..like collard greens.

pretty sure all the nutrition got blasted to hell, but they tasted great next to fried chicken. the greens will turn your "by product" red just like the root portion.

super fun to feed beets to my dog..i always get a text from my wife..red turds = fun!

Love the beetroot - roasted, pickled, freshly grated on a salad, as a dip, doesn't matter what or how, love 'em.

FIL calls them RED MUD (I p!55 myself every time I hear him say it) :D

jcommin 09-26-2012 03:39 PM

The leaves are very good too - stir fry or use like kale or chard in a salad.

I like beets and pickled red beet eggs. My fil would grow his own and also a white radish that tasted fine going down. When you belched it smelled like the worst fart ever.

Love them juiced, boiled, pickled you name it. The greens are awesome. Enjoyed a few from the garden this season.

I love them as much as I love Marmite, which is not at all.

jyl 09-26-2012 04:33 PM

Yes. Like the sweetness. Usually boil, peel, chunk, marinate in rice vinegar.

944Larry 09-26-2012 05:25 PM

I eat the pickled ones but only started that a few years ago because of a buddies urging.

Hard-Deck 09-26-2012 06:01 PM

Yes, fresh and pickled. I also love beet greens as much as spinach

Dan J 09-26-2012 06:12 PM

I love beets cooked whole in a pressure cooker and slathered with butter
Taste like dirt? I don't get that

mikesride 09-26-2012 06:18 PM

Before my pancreas stopped working right I ate lots of beets! But now my body can't process the sugar..... I miss them!

mikeesik 09-26-2012 06:30 PM

Well, if Kohlarabi is a beet yes. Raw. Awesome on the top by the leaves. Have to pick at the right time.
Somewhat of a taste of peas but with a great texture.

cantdrv55 09-26-2012 07:13 PM

Tell me I am not the only one. Beets give me gas something terrible.

LWJ 09-26-2012 07:28 PM

One of the few foods I detest. I think it is the texture.
