do you eat Beets?

man..i am loving them.

i usually roast them and slice them into salads..but lately, i have been cutting them into tiny julienne pieces and tossing them into the greens raw.

my farmer market days are coming to an end..and i am feeling bummed.

fennel bulbs..?

anyone else, fennel and beets? i dont see alot of people eating them..and my office mates cant even recognize the root veggie.

They sure taste like the ground they came out of, so I understand why some people hat them. I could not eat them as a kid, I'd literally get nauseated. Now I do eat them. I like them in winter as a vegetable, in summer only in salads. I like to boil them and then put them in salads or grade them in. They are very healthy.

Try them off the BBQ. Wrap in tin foil and roast them on the grill for about 20-30 minutes. Delicious!

I put one a day in my juicer. A year a two ago I would have told you taste like dirt and refused them but I have started to like them in salads.

I've been tossing the greens out. Should I juice those too?

No middle ground with beets. I love them - except for those cubed things that came out of a can as a kid. They had some specific name they seemed to be known by, but I can't remember...
