11 Amazing Facts about the McDonald's McRib
![]() 3. The McRib is a product of "restructured meat technology." Rene Arend came up with the idea and design of the McRib, but it's a professor from the University of Nebraska named Richard Mandigo who developed the "restructured meat product" that the McRib is actually made of. According to an article from Chicago magazine, which cites a 1995 article by Mandigo, "restructured meat product" contains a mixture of tripe, heart, and scalded stomach, which is then mixed with salt and water to extract proteins from the muscle. The proteins bind all the pork trimmings together so that it can be re-molded into any specific shape — in this case, a fake slab of ribs. 4. The whole process from fresh pork to frozen McRib takes about 45 minutes. Director of McDonald's U.S. supply chain Rob Cannell explained how regular pig gets transformed into the famed McRib in an interview with Maxim: "The McRib is made in large processing plants—lots of stainless steel, a number of production lines, and these long cryogenic freezers. The pork meat is chopped up, then seasoned, then formed into that shape that looks like a rib back. Then we flash-freeze it. The whole process from fresh pork to frozen McRib takes about 45 minutes." 5. The entire McRib sandwich contains about 70 ingredients — including a flour-bleaching agent used in yoga mats. Flickr/Calgary Reviews As it appears out of the box, the McRib sandwich consists of just five basic components: a pork patty, barbecue sauce, pickle slices, onions, and a sesame bun. But, as recently reported by Time magazine, a closer inspection of McDonald's own ingredient list reveals that the pork sandwich contains a total of 70 ingredients. This includes azodicarbonamide, a flour-bleaching agent often used in the production of foamed plastics. The entire sandwich packs a whopping 500 calories, 26 grams of fat, 44 grams of carbs, and 980 milligrams of sodium. 11 Amazing Facts about the McDonald's McRib - Yahoo! Finance

I've been eating foods made from fresh ingredients long enough that restaurant food, particularly McDonalds, is revolting. I don't mean to be some sort of food snob, but it just doesn't taste right.

Sounds like sausage in a different shape. The fact that heart, tripe, stomach and other perfectly edible ingredients go into it doesn't phase me a bit. AAMOF, it disturbs me that this is revealed like it is some BFD gross out factor. What is disturbing is the list of chemicals that are added and are not things we have eaten for thousands of years, along with the nutritional information (fat and calories).

It's probably no more dangerous to eat than to breathe while pumping gas.

There is nothing I could ever learn about the McRib that would stop me from eating one once a year or so, whenever I see that sign- McRib is BACK!.... I immediately have to get one.
You could tell me it was ground up people and I'd still probably eat it... as long as it still had the sauce, the onions, and the little pickles.....

I have a friend that waits on bated breath for the McRib to come every year; has multiple at a time.
I'll just say he has been eating mine for me. No interest here.

No, they aren't that good. For a while, like a lot of people, I couldn't resist stopping for one when the "McRib is Back!" sign came out, but it's been a couple of years since I've had one. Someone mentioned the texture, which is the only unique thing about eating one. If you put loads of BBQ sauce, onions, and pickles on one of their hamburgers it would probably taste the same, but it wouldn't have that strange texture.
