Chocolate Fondue. Help!
Im an avid cook.
I've been defeated by chocolate fondue. Trying to impress my lady tomorrow. I've been practicing w the double bath. But no luck. My chocolate is separating. TWICE! I saw a couple of quick microwave recipes but I'm skeptical. I'm trying 75 to 80% dark chocolate, w very little fat. And cream. Any thoughts? Any experts? Any tips?

At Christmas, one of the kids got a chocolate fountain and I think it needed vegetable oil added to the chocolate. Not sure if would be different for fondue.

You warm the cream and pour over the chocolate. You do not need to put the chocolate on the stove at all. The cream will do all the work. Good luck.

Brownies are good. My favorite is pineapple. Mmm.
If I wasn't snowed in, I could go for making a little fondue.

Actually, ours is more like 3-4 inches of ice and we don't have winter tires.
By the way, after you have everything made, if you need to reheat, use the double boiler. And if you want a little more shine to the chocolate, add a little butter at the end.

Couple tips. Use a good brand of chocolate. Consider adding a tiny anount of real vanilla, or a little chocolate liqueur. Might add a small pinch of salt. Make it right before you need it. Keep it warm in a fondue pot or some other container that has been heated, or has a second pot of hot water underneath it.
Other things to consider dipping: Hazelnut biscotti Almond biscotti Cherries Sections of tangerines Brioche cubes Nuts (almonds, hazelnuts, pecans) |

A couple teaspoons of honey will often pull separated chocolate back together...

you might try dipping sliced pears, dried apricots, and how about some crispy bacon.
get some italian style raspberry jam sandwich cookies too, as a matter of fact a pb&j sandwich would also be pretty good. |

On my first attempts I had an old cooking book with double bath, gradual temperature, thermometers and emulsifiers, almost like a chemistry, science project. This is much easier

We used to go to the melting pot just for dessert. I think they would often mix something like amaretto or grand marnier with the chocolate too. Besides strawberries, pineapple and some other fruit, they often also had small cubes of pound cake.
