Homemade Ketchup


Ketcup
Start with
3 quarts tomatoes cooked down to sauce consistency
1 8 oz can tomato paste

6 tablespoons brown sugar (Optional)

1 ½ tablespoon dry mustard

1 teaspoon allspice

1 ½ cup vinegar

2 ½ tablespoons salt

1 tablespoon black pepper

1/8 teaspoon of cloves

scant 1/8 teaspoon cayenne pepper


Can as you would tomato sauce. This will produce a product with ph 4.5 or lower. You need 4.6 to make it safe to can in a water bath, so if you deviate from the recipe (like adding onions or garlic) make sure to check the ph.

Making grilled tomato salsa today. May not have time for ketchup this year.



all ingredients came from my garden this morning.




The black things are pieces of charred tomatos and peppers.
