i'm calling December "one kitchen knife December"
my stepdad was surgical with one of these. so far, i'm not my stepdad. i havent cut myself yet, but i have come close.
he bought a few of these when he visited Taipei. i found the last unused one on my latest visit and my mom stuffed it into my suitcase as a surprise. thankfully, i checked the bag. i would have been a TSA agent's wet-dream. anyways, i took it, honed it and put it to use. it is effen huge feeling, but dang..the veggies hate it. sheer weight damn near pushes it thru. it is like a big 9x4 straight razor. i'm worried about turkey carving..but i'm all in. ![]() ![]()

I have three cleavers I use all the time. The small & medium ones are razor sharp, and the large one is a bone buster. I like the stability of their mass.

I have to admit I don't understand the big-bladed, laser-edged cleaver/knife...although I'd love to be able to use one. I think I've watched this movie a billion times, and always love the opening and how he cuts the paper-thin slices with such a knife:

Have one. It has more rocker than it appears, and works pretty well. Carving, nah.

If you guys have ever watched Iron Chef Japan, you may have seen the "Tuna" episode where Takashi Mera was the challenger. This is his knife (the big one).
I know it's hard to tell by comparison, because you don't know the size of either. So here's a shot of him using it. And if you don't mind the quality, here's the episode.

Got one and love it. $2 at a garage sale! Razor sharp. Carbon steel. The perfect tool for some things. I would not carve turkey with it though!

That's not a knife, it's a Viking battle axe!
Useful for some things but not right for everything. I could get away with just one knife but I prefer three.

Chinese chefs do everything with one of those. They are actually safer than a regular knife because you can curl your non knife hand fingers and slide the blade on the knuckles.

I used one for 20 years, until I chipped it on something or another. Pretty useful but you don't use it the same way you use a large chef's knife.

update.
i'm getting fairly good at it. my onions are diced into tiny tiny things. the wide blade offers some serious safety since you can tuck your fingers in and rub the knuckles against the HUGE blade. the only thing that sucks is an avocado pit. it hacks and twist it out with sheer momentum,but removing the pit; you cant pinch it off safely from behind the cutting edge like a chef knife. but i havent cut myself yet. i know squat about the steel, but with subsequent honings and stropping on leather, the thing is a scalpel. i did cheat. i used a smaller chef knife to clean some dungenous crab. but i have an excuse. "it's crab and needed to be in my mouth ASAP"
