I’ll just say it, the best meat!
This needs it own thread.
Sandhill Crane. People have nicknamed it, “RIBEYE OF THE SKY”. I think it is BETTER than ribeye. It is similar to the best cut of beef, but the texture is superior, and the flavor is milder. I’ve never eaten veal; maybe it’s like veal. I am struck dumb by how good it is. Word gets out, that bird will go extinct. ![]() |

Working out the math it's about $400 per pound.

I'm sure there is a corollary here that someone can elaborate on: have any of you tried ground turkey for making hamburgers, chili, and other things you'd normally use ground beef for?
We have totally switched from ground beef/chuck to turkey for stuff like this. It simply has much more flavor. Birds taste better? Anyone else?

No, wild birds can be underdone, no problem. They don't live in a sty with 100000 other ones crapping themselves. The risk with factory birds is salmonella.
I eat my wild birds medium but make sure there isn't shot going through it, possibly contaminating the piece of meat. Just like you see here, clean breast. I have never eaten crane. I bet it is great. I love Canada Geese, we call it "steak from the sky" here too. Hard to beat. G |

well i'll be darned. that is really crazy!
heel n toe we've used ground turkey instead of beef for years. much better tacos but you have to be careful not to dry it out. almost have no use for ground beef now.

I think modern agriculture changed the crane. There are billions of them. Before agriculture I don't think the numbers were there. The huge food choices changed migration patterns and help the population grow.
In Texas the farmers hate them as well.

I know you are talking about Canada geese. Did you shoot it? Around here you can run over all you can eat with your car. For a couple of decades, new housing developments have a water feature (pond) as part of their fire protection program. There are geese (and goose poop) in the streets all around them.

I started hunting geese a couple years ago from the "company goose blind" in the field behind my office. I believe the top count from that blind was over 600 birds in a season. (It's not unusual for a group of 5 to limit out in the morning then another group to do the same in the afternoon. )
I think the goose breast is fantastic meat. Some of the guys who hunt don't even want them. The canadas and snow geese are pests many places around here. I never heard of hunting cranes.
