cat bypass. no chip? O2 sensor?

I plan to obtain a SW chip for my 87 Cali 3.2. In a day or two I will have a cat bypass.
My questions are these:
1. what would be the result of installing the cat bypass without a chip (otherwise stock)?
2. what would be the result of disconnecting my o2 sensor with or without the chip and with or without the bypass installed?
Note, the car came from Cal but I am not in an emissions testing jurisdiction.
Thanks

Talk to Steve about what you will have for an exhaust system and follow his recommendations. I've run B&B headers, no cat, and dual out muffler for years with a SW chip pre-programmed for those options. He provided me with a "non-O2" program, as would be sold on ROW cars. I've got modified cams as well, so deleting the O2 was desireable to prevent the Motronic from leaning out the mixture given the cam overlap and duration.

Steve's a great guy and will not steer you wrong!
