I have a 1968 912 and it has no numbers on the temperature gauge. I know that white is cool and red is hot, but in terms of degrees celcius it means nothing to me. Can anybody tell me what temperature sits where on the gauge? Especially the red mark. And, what is the normal operating temperature range of the 912?

If you want the temp readings in degrees, you can replace the temp module in the gauge with one from a 911. It's easy, just unscrew the old one and pop in the 911 module. You'll also have to use a 911 sender. I did this to my car and it worked great.
