Rod, I don't know if you already pulled the trigger on the Misen. If not take a look at the Messermeister line of knives. German steel, the sharpest knives I ever owned. You can order direct from them and they have a great, very inexpensive line as well. Glenn

Those look very nice. Because I'm in Canada, it's a pain ordering direct. Amazon has them though. Avante series. 1/2 price of the Misen, but not as pretty.

CutCo blades hold an edge well but the handles are like holding a chopstick, especially when wet.
Their model 77 scissors are serious tools. They come apart to clean.
I have been giving them for couples gifts, wedding, anniversary etc. I get one name monogramed on each blade as a reminder that it takes two working together to be successful.

My wife does most of the cooking, and appreciates good knives, but heaven help me if I try to explain to her which knife for a task, or how to care for a blade.

I recently noticed a Z bend in the blade of our Shun (knockoff) pairing knife. She used it as a screwdriver.

The type of handle material is more an aesthetic thing for me, other than the weight of the handle offering a balance to the blade. I hold the knives at the middle, at the heel of the blade with a grip on both sides - sort of how Martin Yan (Yan Can Cook) holds a Chinese cleaver. I'll use a cleaver with more of a axe type of motion, but the blade looks like a mini axe too. Japanese BBQ traditionally makes cuts through the entire cut after cooking. Similar to Hawaiian BBQ.

Once the revelation that it's "my knife" sunk in I started modding. On so many knives there are sharp edges (not the cutting one of course) that make a proper grip annoying. Out comes the Dremel! Top of the blade's edges smoothed over as well as the heel/bolster.

While I only need one of each, I so dig the "cleaver" shaped cheap asian knives. One giant meat-axe and one veg-scalpel each for maybe at most $20. But I want more...

Exactly. Along the top of the blade heel. You have far more control that way.

You might also like the Japanese mini-cleaver. They are made of carbon steel, and will rust but they are more precise than the big stainless steel cleavers.

Of course that's an opinion thing. In my opinion $100 for a decent sized chef's knife is enough to pay. I usually pay in that range, & feel like I've gotten my money's worth by the time it needs replacement.

We have a set of 12 steak knives from them. Great knives for the price.

Also, the Shun look nice but I prefer a swell in the grip. Much more comfortable and you don't slip as easily as mentioned above.
