there was a discussion about this here a while ago. It's a guy from SoCal who does these pictures. He found his own company for air-shots. His job is to fly by close and take these shots. Awesome job if you ask me.... I'm sure others (Joe) can chime in here.

Like this one? it's called formation flying, the ramp is 12-15' back from the tail so the nose of this bird is actually under the tail of lead/the photo bird.
