Here you go Bill:

Nanaimo Bar Recipe

Bottom Layer
½ cup butter
Ό cup sugar
6 tbsp. cocoa
1 beaten egg
1 tsp. vanilla
pinch of salt
2 cups graham wafer crumbs
½ cup finely chopped walnuts
1 cup unsweetened shredded coconut
Combine butter, sugar & cocoa in a small saucepan or double boiler. Stir over low heat until blended & sugar has dissolved. Combine egg, vanilla & salt. Remove saucepan from heat & add the egg mixture & stir well. Stir in crumbs, coconut, and nuts.

It is particularly yummy at this point. Resist.

Press firmly into a lightly greased (use butter) 9" x 9" pan. I usually double the recipe & use an 8” X 16” pan.

Cover with saran wrap & chill slightly.

Second Layer

½ cup creamed butter
2 Tbsp. custard powder (not pudding!)
2 cups icing sugar
Cream butter, custard powder, and icing sugar together well. Beat with a mixer until light. Spread over bottom layer.

Cover with saran wrap & chill well.

Third Layer
3 – 4 oz. semi-sweet chocolate
1 – 2 Tbsp. butter
Melt chocolate and butter over low heat. Cool slightly, but while still liquid, pour over the second layer & spread with a spatula.

Chill in refrigerator & serve.

Hint: While the top is still tacky, score in rows. This will prevent cracking when you cut them up. Keep the squares small – usually 1” X 1” is a good serving size.

Chinese for us tonight with Eggnog, yumm. Christmas night however a Beef Tenderloin, green bean casserole, twice baked potato and more Eggnog. I love that stuff.

Hope all your meals feed the heart and sole,.

I just made my Balsamic reduction (2 cups of Balsamic, 2 shots of Port , and a tablespoon of honey.. reduced to 5oz ! )

Butchered 2 PMSOs (Filet Mignon) ... 6 lb each .. "Natural" grass fed beef from New Zealand, wet aged 28 days ... 24 of the BEST possible steaks. (it's a connection I have ... flown in last week.)

Ahhh and doing a Pepper infused Bloody Mary test ... yeah its good !

1 week an just look at that color !

WOW!!! That's a hunk 'o' cow. Or "bouef" up in your neck of the woods. To paraphrase the famous line from "Jaws"..."I think we need a bigger pan."

Our christmas eve dinner turned out good...Cajun shrimp boil, hot baguettes and cinamon seasoned sweet potato fries as an appetizer. Couldn't find the curly fry maker. (Traditional menu the kids picked out years ago)..

For our annual Merry Matini "Its christmas nite and let's have all our friends over for a casual get together because everybody's tired of being pleasant to the relatives and getting cabin fever" party, I'm smoking a brisket over hickory and a turkey over mesquite, buncha finger food nibblies...and of course Sweet Marie will be shaking specialty martinis all evening. Last year I found myself cooking breakfast for 20 or so diehards at 5 a.m....last guest left at 730 a.m as the sun was coming up
