They lie to them about the interview--usually stating it is for one purpose but then when the piece is seen, it is completely different than what was discussed ahead of time.

They carefully script the questions to get the interviewee to say certain things. Finally, when they are called to task for putting words in people's mouths, heavily re-editing footage and inserting things into interviews that did not actually occur during those interviews, Jon Stewart will say that his show is comedy and not real news. This apparently gives him free reign to lie to and manipulate people, misrepresent their words, and fabricate stories all the while representing what they have done to the public as actually occurring.

(I happen to know a lady that was interviewed by the Daily Show years ago, and the questions that she was asked on TV were not the questions that she was asked in person. Look at how the camera shots are done. They always show the interviewer and the interviewee in separate frames. This is so that they can edit in anything they want after the fact.)
