Last night for me it was eggplant parm. I cheated a bit starting off with store bought breaded eggplant cutlets.

It was OK - not as good as 100% homemade but couple things that would have helped...a dash of brown sugar to neutralize the tomato acid a bit and some angel hair pasta to go with. I'll make the pasta tonight when I have leftovers.

Have not cooked in ages, way too tired. Old standby, any kind of white fish, lemon, butter, wine, garlic, caper, tomatoes. So tasty after a long day. But more importantly, the easiest thing to make. Had some rice too.

Thanks Peter. I think you could poach the fish first first but I just started the garlic and a little onion in butter, let that just start to brown and then put in the fish. Sauteed for a minute, flipped and put in 400F for 3 minutes. Pulled fish out of pan, high heat, add wine, deglaze, then everything else adding more butter, reduce and serve.

they were bob white.

Yep, got to shoot them!!! Took my son and a buddy to a game preserve this weekend. My son and I went once before. It is great fun! shot my 28ga which is a blast.

The pheasant and chukar are also delicious. great fun watching the dogs work as well. This last trip we had a first year dog who managed to catch two birds (didn't hold his point well) and a more experienced dog that was flat out bad assed. dog sniffed out a quail hiding under a brush pile and started pulling branches out of the pile trying to get closer to it! possibly the coolest thing I've seen hunting.http://forums.pelicanparts.com/uploa...1516120161.jpg
