I always skip those cuz of the big as my face 400 calorie flour tortillas. It’s a numbers game at this point.

Man, I have to have my corn tortillas or it just isn’t as good.
If you’ve never tried this, you ought to make a traditional style sauce using habanero peppers instead of the seranos that are typically used. Just cut one or two in half and add them to the sauce to infuse their flavor. It’s not so much the heat that makes it good, but the vastly different flavor that a habanero imparts to the sauce. |

The (another one of many) perfect burger(s), this time White Castle style. These were amazing! Next time I won't use my electric griddle though, it turns on and off too much so the onions don't caramelize as they should. Instead I'll get a cast iron griddle for the stove top. Key is when you think the burgers are read, cover with a bowl for a minute or 2 to steam the buns. Fries were also phenomenal, garlic and shallots browned in garlic oil and then tossed with cilantro.
Getting a meat grinder so I can grind my own. I think Peter Luger grinds a porterhouse for their burger, can't hurt to try. Will be a fun summer. Did half with bread and butter pickles, half without. Ketchup, good dijon and yellow mustard were all onhand for dipping. All were delicious. ![]() ![]() Hard to photograph the steam ![]() ![]() ![]() ![]()

Even consider trying to duplicate McDonald's Filet-O-Fish? I watched some You Tube videos on how to do this a while back but never followed through, although I'm a routine fish eater, and have always appreciated the Filet-O-Fish as an icon of the fast food legacy of our country. ![]()

Thanks! I can only take credit for the photo, the wife does 99% of the cooking. But photographing food is particularly difficult. I thought this one wouldn't turn out well as I was outside on the lanai taking a picture into the evening sun, but as it turned out it was the perfect back lighting!

Sometimes simplicity is best. And garlic, garlic too. And don't forget romano cheese. and then basil and Italian parsley, those are the best too. Of course fresh pasta is the best. And a nice Chianti. That's perfection.
The pasta tossed in butter, EVOO and Italian parsley was even better than the awesome meatballs. ![]()

This turned out better than expected. Red curry coconut chicken using the last of a roast chicken from a few days ago. Put a little vinegar and sugar in the rice. Had to sacrifice one of my gin & tonic limes but it's going to rain for a week so that's OK. Tasty 10 minute lunch.

This woman is AWESOME! Love her. So I made some chili dogs. When she says a heaping tablespoon, she means 2 tablespoons. Had two bites and ended up cutting it up and spooning more chili on and went with a knife and fork.
