My wife is a great cook and just wings it almost every night, and its great! Tonight is one of my favorites, venison roast from the deer I got last week with the bow. She has a rub for the venison that is to die for! She won't share it as she is saving it for her cook book when she ever gets around to write it! The carrots and broccoli are fresh picked today from our garden, and have dill and other spices on them. Mashed potatoes and her gravy top off the meal with my favorite beer. The best part, is this is just a typical meal in our house, I get to eat like this every day!

change of plans, no shrimp, dead cow instead.


4 rib eye steak of melt in your mouth bliss.




Cast iron pan sear then BBQ hickory smoke finish, pull at medium rare.




Garlic Butter sautéed whole sweet onion and mushrooms.




Guess I'm roughing it this week for leftovers

Once in a while the wife, who is a great cook/baker, call "you are on your own"... tonight.

Not a problem since I was on my own for 20 years and got a few concuction back-up.

This one is the "2 Pounder Kraft Dinner Special":

1 box of KD original (cream vice milk)

13 oz of dice tomatoes

Ground black pepper

Italian spice

Chill flakes

Top with 2 Black Diamond cheese slice (much better then the Kraft one).

One bottle of red wine to minimized the the artery blockage :D

Can hardly wait to step on the scale tomorrow morning :rolleyes::D:rolleyes:

Pulled Pork, slow smoked:



Lard is Love.



smaller sized pork shoulder roast, maybe 4.5-5 pounds.


Injected with a marinade, some spice rub, fresh ground black/white/red peppercorns. Let rest for a couple hours.


It's the last BBQ on my grill that has tired parts so 6 new cast iron burners will last the next year or two. Couple big hunks of foil covered Pecan wood for the smoke.

I'd cooked up a pound of bacon a couple days before, and had saved the rendered bacon fat and lard.

Butt Roast in a small pan, 1/2 a beer in the bottom of tin for steam, 285 F temps for ~4 hours, pulled the meat right at 195 degrees using my Thermopen.

1/2 way through the smoke I started putting tablespoon lumps of bacon lard to baste the meat. Finger Licking Good.

Let all that render in the beer, basting the roast several times.


Foil wrapped it to rest for about 1/2 hour, pulled pork and chopped some into cubes too.

Poured remainder of beer/lard mix over chopped meat, chill 24 hours to let the meat re-absorb all the heavenly goodness moisture juices.

I like to make wraps using Flour Tortillas filled with chopped lettuce/tomatoes/cabbage, than a BBQ sauce burger bun.


turned out lovely moist full of flavor.
