Lately I'm really getting into these 2" thick, one rib, middle cut prime rib, steaks on the grill.


~2.5 pounds,



dry rub, sear in 12" cast iron pan then ~30 minutes indirect heat and heavy smoke at about 300F on the grill.



pull meat at ~130F internal then tent in foil and let rest at least 10-15 minutes, Thick cut. slice,


melt in mouth.

Pre flying to L.V diner:

Home made beans/bread with BBQ Steak and Bleu Cheese wash down with some Cabernet Franc.

Can hardly wait for desert...

Broiled Halibut - Bloody Damn Yum!
 
Last night I broiled a huge slab of Halibut...cut into two steaks.
Butter, garlic, seasoning, parsley, 'maters, and Mozzarella cheese.
I'll be doing this again. :)

Lamb chops with black currant Vidalia onion compote (blackberry brandy & balsamic reduction) over a bed of mixed greens tossed in lemon, olive oil, toasted garlic with Hungarian sheep's milk feta stuffed peppadew peppers and some sugar snap peas.

It was 3 different plates of lamb depending on whether you had a bite with the greens, the relish or the peppers.

Not technically dinner, but, the GF mentioned that a new food court opened in Flushing at wanted to check it out.... I'm not crazy about food courts, but she really wanted to check it out...

Some of the things we got were fantastic!

Fish, tofu and veggies Szcechuan style (she said this it how it is made in her city, Chengdu)
