Since its visible only at full throttle, seems to me the engine is sucking in so much intake air that it's dropping atmospheric pressure to the dew point.

Like the top of an airliner's wing during initial climb under ideal temp/humidity spread.

I remember reading about weber carbs not happily accepting a certain amount of valve train lift overlap as well as benefiting from a plenum box above (to mitigate rear carb air starvation at speed) and directly below the carbs. Some Fords intakes had a small bulge cast into them expressly for this.

It’s not overlap per se, it’s the cam holding the intake valve open when the piston starts to move up in the cylinder. The cam timing and length of the intake track are tuned to provide max power/torque at specific rpms. At certain rpm this produces positive pressure in the i tack track at other rpm.

This sounds like camshaft lift duration.

My understanding is that lobe separation angle (LSA) is the issue.
