The older I get...the less I like the mega-cheese toppings.
Stuffed crust....Blech!

Give me a pizza with a small amount of mozza...along with pepperoni and sausage...I'm happy.
Onions and mushrooms are great also.

My favorite pizza and one that I have about once a month whether frozen or this great place down the street is a simple very thin crust pepperoni pizza. BUT, I shake on a lot of red pepper flakes on or sometimes sprinkle liberally with Franks Red Hot and heavily drizzle with good olive oil.

If I do a frozen, I'll move all of the pepperoni from one side to the other. To the cheese side I'll add amazing fresh ricotta made in CT and some olive oil and finish with a chiffonade of basil leaves from my plant, wetted with OO. Sometimes I'll add thin slices of compari tomatoes too.

Pizzaria Regina was voted best pizza in the country 2 years ago. I have gone to the original place in the North End in Boston and gotten a pie or two and they are truly amazing.

My off the boat Italian great grandmother made the absolutely best pizza I've ever had, bar none. It was thick and the dough had as much flavor as the homemade sauce and cheese. She took the recipe with her when she passed. When I was kid, we had the most amazing Sunday family dinners wtih 20+ relatives, women would cook all day, fresh pasta was made (actually it was always made) and us kids would pick veggies out of the half acre garden for salad and sides. Homemade wine. Pasta, eel, crabs, fresh bread, pizza, pizzelle with sanguinaccio (chocolate and fresh pigs blood spread), we stuffed ourselves. They used to say I had a hollow leg I would eat so much. It was the stuff that dreams are made of.

We had a pizza maker working for Dominos, we didn't eat it often in those 2 years. Pizza is his number one favorite food. Meat only, max it out, extra cheese. Currently it's Home Run in frozen, with extra mozzarella.

I really don't care, but do like deep dish the best. If there are japalenos on it, I'll eat a slice with, then pick them off the others I eat.

Another very tasty pizza is one with a good white sauce and topped with
smoked salmon and peas. The peas might sound odd, but it's a great combo.

If you ever venture to make home made pizza, try King Arthur brand "Pizza Dough Flavor". It's amazing.

white sauce is great with chicken and bacon too.

One of the benefits of living in Northern NJ is the abundance of great Italian restaurants and pizza. I've never had chainstore pizza and never will - blech. Yes, I am a pizza snob.

That said: I love grandma pizza, , white pizza, pizza with eggplant, kalamata olives, sausage, peperoni, and whatever else makes it delicious.

I like to change it up. The only thing mentioned here that I don’t make or order at least once a year is eggplant. MrsWD likes ham and sauerkraut.

IMHO it’s the crust that makes the pizza. I’ve seldom had a really good pizza outside of New York except for a couple of times I did something right here at home and got the perfect blend of crunch and chewy-ness. I’m working on finding the magic on a regular basis.

I am a pizza minimalist, have been on the quest to make a perfect pie for quite awhile now...

If I do go with extra topping its usually some sort of pork product, sausage, pepperoni, speck or prosciutto, and roasted red peppers...

I consider this zaa close...




I have gone off the reservation a few times..

roasted beet, balsamic caramelized red onion, goat cheese.

Thanks I've put it in a cart. If I ever get an Ooni oven, I'll try it.

So dinner tonight was some Häagen Dazs rum raison and while tasty, this thread inspired me to go out and get a frozen pizza and some baby clams. Mixed a bunch of clams with some chopped garlic and basil and olive oil, cleared some real estate on the pizza and laid it down. Worked. Worked better with a some lemon squeezed on top. And of course red pepper flakes. Sam Adams hazy IPA super cold is a good combo. Good stuff.
