			I don't really like turkey but am stuck with the task this year.  Got the smallest fresh turkey plus a bunch of legs, because I think dark meat is better.  Deboned them, leaving just the "ankle" knuckle.  Brined for 36 hrs in salty orange juice.  Patted dry and air dried under a fan, to get the skin dry. 
		
	
		
	
			
			
		
		
		
		
		
		
		
	
	![]() Made two stuffings. One is bread, shiitake cremini portobello, bacon sausage, onion garlic, chicken stock, hazelnuts, dried cranberries. The other is salad greens, beet greens, blue cheese, garlic, almonds. Stuffed the legs with either or, stuffed the while turkey with both. ![]() Trussed and about to go in the oven. ![]() Will be painting with honey + butter + anchovy paste. My friend is bringing lamb to grill, I'm looking forward to that a lot more than to my turkey. But it has to be cooked for T'giving.  |

			No, vegetable oil.  About 1/2 in in a covered frypan at med-high heat.  Too hot & it cooks too quickly & the breading doesn't bubble nicely & too low, it soaks up too much oil.
