Anthony Bourdain - No Reserv - Techniques Special
Have any of you seen this episode. I thought that it was pretty interesting. I want to try some of the stuff in it. I'm not a big fan of a rare hamburger. I want my hamburgers cooked no less than medium.
I really want to try his Beef Burgundy. I was surprised that the omelet in the show wasn't the standard "pretty", but it did look and sound really good. I find him pretty darn entertaining. Whether he's right or not, I like that he says what he thinks without much thought to whether it's PC. I also like that he often eats food that normal folks eat, like street food or home cooked traditional meals.

One of the better shows on TV IMO.
He just likes good food, and isn't pretentious about it. Good food can come from a push cart, or a 4-star restaurant. He's a chef, he smokes like a chimney, and he says what he thinks.

Cool, I've been wanting to try them, but haven't. My wife accidentally erased the episode that I had DVRed. I'm glad it's on ewe-toob.

Ever since I read his book "Medium Raw", I have not watched his shows. In his book, he comes off as an arrogant, narcissistic whiner. YMMV and it apparently does.

If you haven't yet, I highly recommend you read his first book, Kitchen Confidential.
It's what made him, and it explains a ton about who he is and how he grew up as a chef. It hooked me hard enough that I read it in one sitting. |

Kitchen Confidential was a great book. Medium Raw was horrible! I could barely get through it. OK, you can drop f-bombs. I get it!
The only thing that saved that book was reading about the guy who cuts up the fish at Eric Ripert's Fish restaurant and learning about that exotic bird that you eat whole and is illegal to cook. Anyway, he's great on Top Chef.

Agreed on Kitchen Confidential and the series.
The Keller approach to a perfectly roasted chicken is perfect in its simplicity, ease and results. Temper the chicken, generous salt and pepper, truss properly, and roast it.

Bourdain did an "Evening With"/book-signing in our town last year. He really is that charming. Kitchen Confidential is "the" book; Medium Raw is more of a magazine piece/therapy. He was married to his heroin/cigarettes/CBGB wife when he hooked-up with current wife. Now he's a dad, just chipping the tobacco, and is putting on weight like any other self-respecting drug-free 54 tear-old. He's grown and evolved, but stays entertaining because he surrounds himself with people who keep it Real.

Everytime I see the show I think I could have traveled with him, the only thing is now I don't think I could keep up, he drinks a lot more than I can these days.

The Les Halles cookbook. It is great. Full-throated versions of classic French bistro food. Who cares about calories, fat, salt, Gauloises, or booze. Bring it on.
