I'd skip the Webers and go with 40mm PMO's.

a 2.7 per rpm needs a fixed amount of airflow that 34 vents satisfy

i am using e-cams and 8.5:1 pistons

There are some great posts in the engine rebuilding forum of guys going through this exactly and a lot of advice from others. You should check them out. If I was on my computer instead of my iPad this evening I would send you some links.

Carbs will work great on this engine. I'd use any of the set-ups you find on here to start with. You really will want to dyno for fine tuning, or buy a wide band O2 meter. I have a cheap WB O2 meter in my car and it is a Godsend for tuning.

I'll second that. I put a AEM wideband analog gauge in my racecar and it's a great tool for tuning and monitoring fuel delivery behavior. It pays for itself very quickly. It's like having your own dyno at home before you take it to the dyno.
