If you stay with the carbs the head temp sensor would not have much purpose. To connect it with a temp meter you'd need to find a meter that has a matching resistance range of the sensor. I don't know if anyone has tried that??? The VDO head temp setups use a matched meter, sensor and wire harness and fits to a spark plug. Good luck.

Funny enough, you can use a stock oil temp gauge with the FI's head temp sensor. It will read--something. You'll get "hotter" or "colder" readings appropriately, though you'll have no idea just how hot or cold the head really is. Just like the stock oil temp gauge--and about as useful.
Note that the aftermarket VDO head temp gauges work on a different principle alltogether and cannot use the stock FI's sender. --DD
