Well the bluetooth module still has to go through USB. And USB communication is pretty robust, with very low bit error rate (something like 1 x 10^-10).
I wouldn't worry about using a bluetooth module.

USB is not the weak link - knowing the dropout rates of bluetooth, the idea of that signal with all that critical data being transmitted wirelessly does not instill confidence - why wouldn't you just plug the thing into the computer? it's not like it could be more than 3 feet away anyway for tuning
i've spent about 200 hours tuning a kit this year, and the part throttle stuff is hard enough to repeat consistently without adding bluetooth error rates and drop outs to the equation - that just sounds like a bad idea to me, and no advantage that i can see to it |

Even if bluetooth is the weak link - the signal still has to go through the USB error detection. So if there is a bluetooth dropout or bad bit, the USB should detect it and request the packet to be resent...
