you know those pre-marinated meat bags? sous vide in bag?
been googling.
the bags are BPA-free. any reason you cant soak the label off (or not) and drop it into a hot bath to sous-fide the darn things? you cant get a more sturdy bag for sure. my janky ziploc isnt a better option for sure with respect to leakage. anyone try this? no weird third-nipple pop anywhere..purple glowing stools? i'm thinking those premarinated tri-tips.

I use our sous vide at least 3 times a month, love it! Bacon wrapped venison roast at 144* for 5-6 hours is amazing!!!
We don’t buy the pre seasoned cuts as I find them too salty but I don’t see why you couldn’t drop them in the bath. Like you said Vash, those bags are damn near bullet proof and usually require the finest German cutlery to pierce them. We use the Cabelas brand vacuum seal bags and found them far superior to other brands. We have been know to use a Ziplock in a pinch and squeeze the air out by immersing the bag. Same issue here. If you *really* like the taste of salt, go for it.
Personally when I buy them (and it is only the pork tenderloin, and only when they are on the BOGO list) I always get the un-seasoned and do it myself. |

Those pre-seasoned things give me the willies in general but I don't see why you -couldn't do it.
I heard someone say once that those cuts are doused in salt and goo because they're the stragglers and need it to seem fresh. Could be BS.

I think those packages sit long enough that any salt in the marinade will have already fully penetrated the meat, so no point in draining off excess marinade.
I thought about trying this a while back, but the packages I saw all had one of those "meat diapers" inside.

I've been using the Perdue breast ina bagfor awhile. Not the best chicken but I haven't grown another nipple yet.

I've never had a pre-marinated cut of meat that i liked. As many have said, they are always too salty and over seasoned. I wouldn't do it.

Dude, anything marinated in a vacuum bag is garbage. Meat quality and marinade! Unless you have a butcher that's affordable, for tri tip you need to hit costco and buy their prime. Then you're talking. Even their choice is better than any marinated crap you'll find at the store.

Is it safe? Yeah, probably. Grab a beer and go for it.
Is it tasty? Well, probably not. The more processed your food is, the worse it usually tastes. Apart from simple brining or smoking, I have yet to eat something like that but tasted as good as what I make from scratch. |
