Signature Dish?

As I just finished up a super-tasty lunch, I wondered how many of you have a signature meal?

Mine is easy. Pinto beans. They are a foundation to a bunch of things we eat, including a straight plate of beans. Made well, beans are fantastic. Lunch was huevos rancheros, which is about my favorite meal. (I know, here come the phart jokes...)

Another item I do well is cappuccino. I think I have perfected this during COVID.


In process? Pizza. I would love your tips and input.


Finally, if I could conquer a paella I would be very pleased. I have made paella before but only on a very large pan with a bunch of help.

I like pinto beans. MrsWD doesn't, so I make them for myself now and then. I made a batch a couple of days ago.

Pressure cook beans for half an hour or so, or soak them overnight and - oh hell, they're beans - cook them.

Cut up and fry a couple of strips of bacon
Add two tablespoons of chopped onion when the bacon is almost done.
Add two cups of cooked beans
Add two tablespoons of PV Ranch hot tomato salsa
Add two tablespoons of sweet BBQ sauce.

It's quick, easy, and tasty.

i dont have a signature dish.

and beans, i love them. i love making all types EXCEPT the sweet ones. i dont understand sweet beans like boston baked beans. i can eat them, but i dont make them.

pinto beans? i have one use for them. Frijoles. a simple mexican bean dish.

beans are why someone invented ham hocks.

Malay style chicken curry.

The strange thing is, every time I make it, same ingredients same amount of time same everything. they taste different. Ranging from good to excellent.

The next time I have friends around for one of my signature dishes I'll cook it the night before as day two is always a lot better.

I've got a couple of different things that I make that are pretty cool - but this is my newest favorite!

Jalopeno peppers stuffed with jalopeno cream cheese, wrapped in bacon and smoked on the Traeger.... This were absolutely fantastic!!!

That looks fantastic. Do you start with raw bacon, or partially cooked? What keeps the cream cheese from melting and running out of the jalapenos?

My guess is that it's the spices that are a little different every time. You know, Spice #1 was a little different tasting this year than last due to more/less rain/sun/whatever, Spice #2 came from a farm down the road that uses slightly different seed, etc...

My last batch of chili tasted completely different from most of them, and didn't get as red. I'm thinking the batch of chili powder was different from most. The place that I get our spices has excellent spices, usually far, far superior to what you get at any grocery store, but every once in a while, a batch is VERY different from most of them.

Raw bacon to start. An hour smoking and 30 minutes @ 350 on the smoker.

Make the peppers into little "boats" by slicing just one side (the side that wants to stay "up" and scooping the insides out with a small spoon. Wrap the bacon all the way around and pin it with the toothpicks. The cut side stays up in cooking.

And of COURSE any Pelicans are invited to our house!

My thoughts too.

GF's friend at work from Sri Lanka said spices shouldn't be older than three months. Her mother sends her over fresh spices so she gives GF some. Very sweet of her. I tend to think of any spice being less than two years old as being fresh LOL

No signature dish, but probably the two that people who know me love the most are a Senegalese peanut soup that I got out of some book 20 years ago and refined, and ajiaco according to my aunt's "recipe".
