I LOVE milk! The colder the better. Not unusual for me to put mine in the freezer a bit before consumption. I remember one time all I had for a meal was cold milk and a veggie. Can't remember which veggie - maybe Broc. - but it left a very positive impression on me that I was in heaven that simple meal tasted so good.

Next time, try to saute some garlic in virgin olive oil till garlic is melted then pour over the angle hair. Sprinkle some black pepper. Great spicy taste. My mom would do that sometimes and she called it pour man's sauce. Be careful with how many garlic cloves. You don't want it to be too overly garlic taste.

That sounds very interesting....thank you! Funny you should mention your Mom because this batch is to be shared with my Mom who lives in town here on her own. At 97 she doesn't cook as much as she used to and of course stopped driving so I bring over provisions and also prepared food at least weekly. She's not too crazy about strong flavours so will do the garlic technique you mentioned next time in a small batch just for myself....although I will also share some with her and get her reaction. Will keep you posted!

It's official. I'm closing down Tru6 and and opening a birria taco truck. And include other international inspired sandwiches. My god these were amazing. Didn't use beef but a pork shoulder I did in a crock pot and then made the guajillo chili sauce combining the two for the "consommé." Tucked some onion-cilantro inside each after I fried them up. Salty cotilla cheese made them perfect. My only change when I make them again is MORE of everything. My god these were amazing. My apologies to all of my current and future customers.

Can't give you advice on your decision but the old adage that "if you do something you love, you'll never work a day in your life" comes to mind.

Hey Baz, I'm actually retired and doing Tru6. I have "worked" maybe 3 days in five years working very hard. But I love it so much, it's never work. Soooo much joy. Anyway, when I retire again I'm definitely opening a food truck or a restaurant. I could make these and others all day long. No reason I couldn't make an Indian version of a birria taco. Or Chinese or whatever.
