I don't really like turkey but am stuck with the task this year. Got the smallest fresh turkey plus a bunch of legs, because I think dark meat is better. Deboned them, leaving just the "ankle" knuckle. Brined for 36 hrs in salty orange juice. Patted dry and air dried under a fan, to get the skin dry.

The other is salad greens, beet greens, blue cheese, garlic, almonds. No, vegetable oil. About 1/2 in in a covered frypan at med-high heat. Too hot & it cooks too quickly & the breading doesn't bubble nicely & too low, it soaks up too much oil. The other trick is: Never bread it ahead of time. You want to bread it & fry it instantly. If I was a true purist, I would use lard.

the chili broth really made it John. Could have used some shrimp and mussels for a completely different, but equally delicious, character. next time you are here we'll plan.

Brought a pork belly appetizer to a dinnerful of Muslims (Persians). I kind of think this was a faux pas. But everyone is chowing down on it so I lucked out, won't be beaten with a shoe or put to the sword I hope.
