That sounds good Tim, thanks. I've also been thinking of taking half of it, searing and putting in a crock pot with some chiles, etc. and then shredding.

you can buy a seasoning packet at a store, marinate over night.

or try this recipe, baste with sauce towards end of bbq/smoking for stickiness heaven.

JR, that looks good too but I'm so done with Fall/Winter. Thanks David, nice idea as well.

I cut it in half, one of which was browned with sweet onions and garlic, pan deglazed and went into the crock pot with:
Taza chocolate
1 tomato
chicken stock and water
dried anaheim chiles
1 dried habanero
nutmeg, cinnamon, 2 cloves, bay leaves

Will be ready to shred tonight.


Other half I think I'm going to stuff with a duxelle using mostly white mushrooms, a few shiitake, tarragon and sherry, though that's still trending fall, so may just do a peach compote of some sort and stuff it with that, which might be good chilled with some kind of mayo and greens. Today is the first nice day in about a year I think, trying to focus on the coming warm weather. And mole tacos to come.

Two tacos.

Fresh corn tortilla, shredded pork, sweet onion/cilantro, cotija cheese, mole sauce.

Fresh corn tortilla, shredded pork, sweet onion/cilantro, cotija cheese, tomato, avocado, lime.

Third just the pork, onion/cilantro, cotija and lime with some Valentina hot sauce. Simple, super tasty, I'll say the best.

I think the mole will be best mixed with some pork and used to make enchilades. the one taco was better with more sauce and I think chocolate-chile-pork stuffing will be great. Reduced the stock, made a roux, added more chocolate, the resulting mole had a great chocolate start and a spicy chile finish. Cake flour made it silky. Came out great for winging it.

Yum, I love it when my wife hits it out of the ballpark..............as I do 85% of the cooking and 100% of the photo taking........last weekend it was her turn to be working her magic.




Our own fresh caught Ketchikan Alaskan Coho Silver Salmon.

Mustard Rubbed Salmon with home-made crouton garlic/dill "dressing" mix, oven cooked in a baking dish for moist buttery goodness.


Add some home made fluffy butter/cheese biscuits and crispy cuc's on the side.




Salmon then served and topped with Sautéed Mushrooms ....................took it over the top of decadence. :D

Paired with some nice crisp white wine it was awesome.

Rest of the loin stuffed with oyster mushroom/tarragon duxelle and cotija which complemented it quite well. Used dry vermouth in the duxelle which worked great too. Original plan was to keep caramelizing the onions with the potatoes after the loin was done, then puree and strain and add to a beurre blanc but was way too hungry by the time they were done so just used a little pan drippings and it was done. Wanted it to be a hearty, turf version of a stuffed sole. Was very good, the onion beurre blanc would have added a lot I think. Good to have leftovers.

Loin is done, took it out to finish the onions and potatoes

Thanks it was quite good. I found a run over kiwi on the road (supermarket chicken) + can of condensed chicken soup+ fennel seeds and cracked pepper. As good as a kiwi pie. The sausage is homemade with venison and pork belly plus other herbs and spices.

Fried egg

Bacon

Pepper jack cheese

Jalapeños

1/2 pound custom ground 80/20 beef patty



then add all the veggies and blue cheese dressing to make it healthy.
