The ball on top of the kraut is a potato salad ball. The meat melts in your mouth, the taste is sublime!

Next time I'll try to get closer

Chinese 5 Spice Beef short Ribs.

Beef Short Ribs, mix of Bone and Boneless.

Braised then baked ~1.5 hours in cast iron pot with lid


Chinese 5 spice and dark rich roux bakes down into butter tender decadence.




simple and fantastic,

follow this recipe to the letter, I've done it 5-7 times now and it's melt in your mouth orgasmic.

9 lb. Pork shoulder, in the roasting pan.



Cooling on a platter.



Pulled, and on the plate with homemade slaw and baked beans.

Had three racks in the freezer and yesterday was the day.
Low and slow. Temperature controlled by the new DigiQ toy.

Pretty good. The best I have done since I got the BGE.

Tried a few new things. I applied the rub the night before. If I do this again, I would cut some or all of the salt out of the rub.

Left overs today! Yum!

Crappy Cell Phone camera image, so the seafood pasta dish didn't photo well, but was delicious as a complex flavor profile.
