I have been a vegetarian for @ 40 yrs now. Beans & grains combined provide a protein balance equal to meat. My favorite trick for tofu is to buy the freshest, firmest tofu you can find, then freeze it. After you thaw it, press the water out of it then a) marinate it before cooking in the flavors of your choice b) fry it in a hot hot oil that you've flavored w/ say ginger & garlic, you get the idea.
The freezing changes the texture to something more chewy, w/a mouth-feel closer to meat & it absorbs other seasonings better. I personally cannot eat tofu that's not been previously frozen.
Quorn makes a good turkey roast. Morningstar Farms has a wonderful line of meat analogs found in the freezer section of most all major grocery stores (think not-burgers & not-sausage)
As far as staying physically fit, I rode TB racehorses most of my life, that takes lots of strength & stamina. I don't slouch. I do yoga, ride in 3-day events, hike, camp belly-dance & garden. My friends get tired watching me & just stare in amazement & smile. When my MD does bloodwork & my annual physical, he just says he wishes he had my #"s. Give me a little bacon grease over that franken-food they are cooking up..

Olive oil is one of the good oils, so is coconut. Corn oil and soy oil are not fit for animals, much less people. Canola oil is so processed as to be considered an industrial product.

What sould be eaten is quaily foods without the excess salt, sugars and cheap carbs of the modern diet. Your body is amazingly self adjusting - if you eat the right things.

Life is too short to eat flavorless food..

Very good IMHO. Only thing I cook with practically. I use olive oil even to substitute for butter in any of the "brown in butter" recipes. It is fantastic in salads and we are fairly generous with it. We do not eat much animal fats or other vegetable oils.

Brief update

When I posted this thread, I was around 170 lbs. I've continued to change my diet. I've almost eliminated white bread. I stay away from most/all processed foods. Can't stand most processed foods and restaurant food because of the sodium. I still eat meat: chicken, pork, and beef, but only in small quantities. Eating lots of beans, veggies, and fruit. Exchanged olive oil for butter. My weakness is chocolate, but that's only occasional.

I had a scaffolding accident and broke a few ribs. I recovered quickly and began riding my bicycle. Now, I get hungry 2 hours after eating. I'm always hungry. Weighed myself yesterday, and I'm around 160 lbs. I realize some of that is water loss, but it wouldn't surprise me if I'm down 6 pounds in the last month.

I'm worried I may not be able to keep the weight on. Between physical work (remodeling) during the day, exercise in afternoon, and a clean diet, I have to find a way to get more calories. In essence, the junk food was keeping my weight on, because it was so dense in calories. Now, I have to find a replacement.

It sounds like the perfect excuse for eating lots of chocolate. Only get the good stuff and try to stay 75% cocoa or better. High cocoa content is supposed to be good for the heart, I think.

half of your plate should be fruits and veggies.

for all of you jonesing for some protien..have you tried QUINOA? it is fantastic. if it wasnt so expensive (relatively) i would sub it out for rice.

it is nutty, great texture..and full of protein. it trumps soy in the protein dept. i have a MMA buddy that lives on the stuff.

i buy it at a health food store, and get to flirt with the hippie chicks. i was disappointed that i liked it so much. like all hippie food, it does not sound like it is spelled. they pronounce it like, "keen waah".. effed up, if you ask me.

i think most of the good stuff of olive oil goes byebye when you heat it up. but for the most part, i still cook with the cheaper olive oils.

i have some decent oil i keep for drizzling over things. like on fresh corn.
