^During the ride, I missed seeing him do it but apparently the process goes something like this:

Open axle release lever.
Axle has teeth which ride on the teeth in the dropouts. Its precise enough to keep all in alignment.
When axle release is loose, you pedal slightly forward to relax chain tension.
The other lever moves a fork set over the top of the chain. Select cog by moving that lever.
Once in the desired cog, tighten axle with the other lever.
I would guess the process is easier going from low range to high gear. The wheel when loose would naturally guide rearward.

Probably not unlike gingerly shifting a vintage Ferrari. Do it wrong and its mayhem.

Other: If you noticed the pic of Bartali he also has a front rod shifter. I have one like that yet for rear derailleur with usual spring tension - works fast and efficient. But used in combination Cambio Corsa and with changing front rings, you have to make up the slack too! That means all the mickey mouse rear lever action at the same time... yikes.

that one huge drop on that LeMond. Who make that bonded carbon frame? Specialized, Giant or Vitus? It looks so Vitus from the fork

I picked this up last weekend in Davis, CA. Craigslist score. The pic is in a crap hotel in Bend OR on the way back home. 2010 Trek Madone, Project One, full Dura Ace 10 speed, carbon wheels, compact crank. It needs a few things but I was able to get it in riding shape for a 30 mile shakedown with my riding group on Tuesday. Love it.

I've heard that can be a problem. It's been on the wall since the late 80's and probably only a few hundred miles on it since I bought it new in 87. I has one of the last Super Record full sets ever made on it.

A go-zillion years ago I knew the guy who invented the one-wheeler (back in the 70's). Kinda like a unicycle but was geared to run way faster, with more control. This guy could jump curbs up or down at 20 mph ....
The bikes were hand made by two guys named Lizard and Mike.

That one wheeler is really cool Sammy. Back in the day when I was a kid on long island there was a guy who rode everywhere doing a wheelie. Always envious. I never mastered the wheelie yet. I suspect its a little bit easier on that thing since the handlebars are solid
