I have the exact same issue with my '86 along with the right turn signal won't lock into place. It's good to know that the issue is common and fairly straightforward to fix.

A bad vacuum line could also cause fuel cut but you didn't mention it happening at approximately 4,000 rpms (?) so it might not be the one that goes to the Wastegate.

My '86 hits fuel cut @ ~ 4k...

As for the Fuch's, you might need a small 7 or 8 mm spacer in the rear but I would test fit the Fuch's to see how they line up in the rear and go from threre - the front's...

I'm not sure about the late offset suspensions but I have 17" x 10" (275/40) & 17" x 9" (255/40) CCW Classics mounted onto my '86 with no fender rolling at the stock ride height.

I've picked up a set of 18" 2002 Carrera 5 spoke lightweight wheels, 18x8 (50mm) with 225/40ZR18's, and 18x10 (65mm) with 285/30ZR18's for my '86 951.
